Festival Food on the Minds of Fair-Goers

Pork was on the minds of many during the opening day of the Knox County Fair.

And that was a good thing, because there was plenty of pork for people to chose from, from chops to bacon.

The Pork Producers were out at the fair cooking up a storm looking to feed as many who came their way and Pork Producer President Brenda Schubbe tells WGIL there’s something for everyone.

“We have a chop on a stick, we have a bacon burger-que, which is a pork burger topped with barbecue pulled pork topped with bacon,” Schubbe said.  “It’s a big hit, as far as our sandwiches go.  [We also have] a butterfly pork chop, a pork burger, and bacon.”

Schubbe says you can never go wrong with bacon and you can add that to any sandwich they have.

The Pork Producers also have recipes available on how to make pork dishes and ways to cook pork; all you have to do is stop by and ask.

Fair goer Jen Gibbs tells WGIL, when it comes to the fair she’s got to get her fix.

“The only time I ever eat one is at the fair:  lemon shake-up and a corn dog,” Gibbs said.

Michelle Doty of Micki D’s Sweet and Sassy Kettle Corn tells WGIL they’re offering the traditional fair treat with a twist.

“We have grape lemonade, cinnamon apple, we have regular popcorn, and we actually have a sugar-free kettle corn that we make with Splenda for those who are maybe diabetic, or just don’t want to eat the sugar, or for whatever reason,” Doty said.

Doty says the idea for her business came from her love of the snack.

She says most of the flavors they’re offering come from whatever she thinks sounds good together.

The fair runs through Saturday night.
