A new business will be hosting it’s grand opening Saturday at the Sustainable Business Center on West Main Street in Galesburg. The Knox County Brewing Company, after holding a couple of soft openings will officially open it’s doors this weekend. Owners Matthew and Sarah Hanson have 15 years of social entrepreneurial experience. Matthew, an Austin, Texas native, tells WGIL they wanted to bring that entrepreneurial approach to Knox County. “When we came up here with the entrepreneurial mindset, I think the driving force was: What kinds of for-profit business could we start, in the realm of something we like to do, that we could do it not just for the bottom line, and not just for the taxes the county would receive, but for the good of the community as a whole,” Matthew said. “So this is what we came up with.” Hanson says a percentage of the profits each quarter will be donated to a local non-profit. The first non-profit to benefit from the new business is Habitat for Humanity of Knox County. The former pastor says the business will have a tap room and will hopefully act as an off-site community center where families are welcome. The business will not offer macro-brews because flavor is their biggest guide. They will have a selection of IPAs, stouts, porters and belgians and will soon be available in local restaurants in Knox and Warren County. Knox County Brewing Company’s grand opening Saturday will feature a couple of brews from Monmouth’s De Novo, as well as four or five of Hanson’s own. He says Saturday will feature live music and food from Smokin’ Willies and will last from 2:00 pm until 10:00 pm.
