The Packinghouse to Become a Chop House
A three-decade-old restaurant in the downtown Galesburg Seminary Street District is no more.

Jay Matson says he has officially transferred ownership of The Packinghouse to Chef Todd Erling, who is in the process of remodeling the eatery in anticipation of becoming "Todd Erling's Chop House" as of Thursday.

Matson tells WGIL that means for him, retirement can officially begin.

"We've had a tremendously long and wonderful run in Galesburg," Matson said. "My wife and I have been there for thirty-three years. We have a lot to be thankful for, and not too much to be sorry for."

"We're real happy to see there's some business that's going to continue in that building."

The Matsons announced plans to retire several months ago, with hopes that Erling would become an owner operator.

Erling tells WGIL the new restaurant will be focusing on dinner only, with what he hopes will be items for every palate and budget.

"We'll have a beautiful Alfredo and seafood-- that'll be for twelve (or) fourteen dollars," Erling said. "And then at the other side we'll have a twenty-two ounce, Expresso Rug, Cowboy Rib-eye for thirty-eight (dollars)."

Erling says the new Chop House will open Thursday at 4pm, and will host a celebrity chef competition the Saturday of Railroad Days.
