New Locally-Made Pizza Joint Coming to Seminary Street
Thanks to a Saint Louis couple, you'll be able to snag yourself a slice of locally grown pizza in downtown Galesburg by the first weekend of July.

Kevin and Samantha Prow are working to tidy up the space on Seminary Street sandwiched in-between Stone Alley Books and Dove Tail Arts. The joint will simply be called "Baked."

Kevin tells WGIL the carry-out restaurant will feature a simple, but healthy, menu that's aimed at ridding the junk food mentality associated with pizza.

"We like the idea of keeping things in the neighborhood, and keeping things local," Prow said. "We want fresh, and we want in-season, and that's the way to do it; relationships with the local farmers, and they hook you up with the great vegetables. Those things make great pizzas. That's why we want high-quality, really good stuff that people can feel good about, and know they're getting the most nutrition out of something that people might just think of as a junk food."

Prow says customers will have a few 'core' pizza selections to choose from and there will also be a variety of other baked goods.

He says he was inspired by his grandmother to continue the family tradition of making pizza in Galesburg. A Galesburg native, Prow says growing up she would always throw pizza parties for the community.
