Spudos and More Opens, Touts Healthier Donuts & Vast Menu
posted 9:15 a-m 3/31/09, updated 11:29 a-m, 3/31/09 The newest eatery on North Henderson Street has arrived, much to the excitement of donut enthusiasts.

Spudos Donuts and More, located at 1922 North Henderson where Fazoli's used to be, opened for business over the weekend.

Spudos specializes in donuts made from a potato based recipe that contains no animal or trans fats and are lower in sodium and calories compared to traditional donuts. But, the menu isn't just donuts. The new restaurant owned by Mike Patton of Galesburg is the first of its kind. It features burgers, sandwiches, Chicago style hot dogs, soups, salads, appetizers and daily specials.

The inside of Spudo's dates back to the 1950's with a jukebox and numerous photographs from Patton's collection. Patton says business has been excellent and it's gratifying to see things go so well so quickly. In fact, Patton says he plans to add two bakers right away. Even more staff could be brought on board if business continues to be brisk, and Patton says he's also considering expanding the hours - possibly in May.

Spudos Donuts and More is open 5:30 a-m to 2 p-m, Monday through Saturday and every Sunday morning.
