Growing a Garden Helps Grow Community
A group of local public housing complex residents are on a mission to eat healthy, thanks to some much-needed donations.

The Knox County Housing Authority Wednesday helped residents of the Woodland Bend Housing Complex near Kiwanis Park plant a garden. They've done so in the past, but not with the donations of Hy Vee, who contributed plants, seeds, and topsoil.

Michelle Kim works with the Housing Authority and is helping to oversee the garden, and tells WGIL because of those contributions, this year's garden will be different.

"It was divided up into sections and residents had each of their own sections and could plant what they wanted," she said. "And this year with the sponsorship from HyVee, were planting a variety of different things that should appeal to everybody."

"And so it'll just be open to everyone, instead of everyone having their own section to maintain."

Kim says the registered dietitian working with both Galesburg Hy Vee's -- Meredith Tibbe -- will work with the residents of the area formerly known as Iowa Court to provide them cooking lessons and ideas on what they can do with any extra vegetables that come from the garden.

Everything from herbs to summer squash was planted Wednesday.
