U of I Extension Offers Safe Turkey Prep Tips
It may not fit your Thanksgiving tradition, but it is much safer.

"A turkey will roast better and stuffing will be safer to eat if we cook them in separate dishes," said Amy Finley with the Knox County University of Illinois Extension. "It's best to roast your turkey in the oven with nothing inside it, and take your stuffing and put in a regular dish and cook it that way. You can always add the turkey drippings to it later if you want to."

That's Amy Finley from the University of Illinois Extension Office.

She also reminds everyone planning to cook a large bird for the holiday table, that food should not be left out after the Thanksgiving feast.

Bacteria can easily enter food that has been left out and Finley says leftover should be put away in the fridge until a person is ready to reheat them.
