En Season Now Cooking Up Gluten Free Bakes
Another local entrepreneur is testing their innovation at Galesburg's Sustainable Business Center.

Nancy Brown is setting up shop inside En Season with her new company--- called Good Life Baking. She will utilize the kitchen one day a week to bake.

Kitchen Coordinator Peggy Wilke tells the WGIL Morning News her friend's bakery will give a different taste.

"I have tasted gluten-free things that you can buy at the store, gluten free baked goods sold in stores, and they taste like a cross between Styrofoam and cotton," Wilke said. "Nancy's gluten-free baked goods, the ones I have tasted before, are absolutely delicious."

Wilke says En Season is currently serving Brown's pumpkin bars as a dessert without even advertising them as gluten free.

En Season is open for lunch Wednesdays through Fridays from eleven to two. The organic menu changes each day.

Incubator Director Eric Dilts says he envisions a near 75-percent occupancy rate for the Sustainable Business Center by this time next year.
