IDPH offering food safety tips this holiday.

The Illinois Department of Public Health is offering some reminders on how to protect your family and friends from foodborne illness this Thanksgiving. As a basic rule, you need to keep hot foods hot, and cold foods cold. That means hot foods shouldn’t dip below 140 degrees and cold foods should remain under 40 degrees. Public Health Director Dr. Ngozi Ezike says you also need to make sure the turkey is completely thawed. “The rule of thumb is that you thaw for 24 hours for every five pounds of turkey,” she said. “So if you have a giant 20-pound turkey that’s still in the freezer, you’ll have to find a really good way to get that thawed out in time.” Turkeys should not be left to thaw on the counter. Instead, you can place the bird in cold water, changing the water every 30 minutes.
