You will soon be able to enjoy an authentic Moroccan shish kabob or gyro at various locations around Galesburg.
MB’s Food Truck expects to start operating later this month. Owner Mohammed Ben Youness and his wife Ghizlan will serve out of their food truck at a city approved location on the Public Square. They will be able to move their truck to local events and festivals, along with bars or brew pubs that don’t serve food.
A native of Morocco who moved to the United States and Galesburg in 2017, Ben Youness said authentic Moroccan shish kabobs — available in beef or chicken and cooked on a charcoal grill — will be MB’s signature item.
Ben Youness said he will prepare shish kabobs the “Moroccan way,” featuring only the meat and seasoning that includes spices only available in his homeland.
Gyros will feature slices of grilled beef and lamb. And on Fridays, MB’s will serve Moroccan couscous.
To start, MB’s Food Truck will be open Thursdays, Fridays and Saturdays, serving lunch from 11 a.m. to 2 p.m. and dinner from 4 to 7 p.m. Ben Youness plans to operate his food truck year round.
Eventually, MB’s will offer grilled burgers, Moroccan bakery items and a breakfast menu.
The commissary kitchen incubator in the former National Guard Armory will serve as the home base for MB’s Food Truck.
Ken Springer, president of Knox County Area Partnership for Economic Development said MB’s Food Truck will be a great addition to the local food scene. Springer said, “I think people are always going to be excited by new types of cuisine becoming available locally. We were grateful to be able to work with Mohammed and I am personally looking forward to his new business.”
On Monday, the Galesburg City Council approved MB’s Food Truck for $7,500 in startup funds from the new Minority and/or Woman Owned Business Startup Assistance Program.
Ben Youness has eight years of experience in restaurant food management. He previously operated his food truck in Davenport, Iowa.
