
Fisk Bier & Wine has opened its doors at 240 E. Simmons St., reimagining the former La Cantinita space as a warm, inviting bar and bottle shop for craft beer, wine, and curated snacks.
Owned by Galesburg natives Kelly and Sam Fisk, the venue aims to elevate the downtown dining scene with a blend of historical charm and modern hospitality.
Craft beverages and culinary pairings
Fisk Bier & Wine features a rotating selection of craft beers, complemented by a growing wine list, classic cocktails, and signature mocktails crafted with fresh juices and house-made syrups.
Kelly Fisk notes, “We’ve brought the worlds of craft beer and wine together, without prioritizing one over the other.
“And we have a tiny little kitchen that cranks out a stellar charcuterie and other great snacks that pair perfectly with your drink of choice. We pride ourselves in having the best charcuterie in town, along with some other adventurous snacks that will delight the senses.”
A cozy, nostalgic space

The space has shifted from La Cantinita’s bright, modern aesthetic to a darker, cozier vibe infused with nostalgia. A toile-inspired mural by local artist Basia Kroll accents the interior, while an abstract landscape painting by Hilary Anderson enhances the back patio, still a work in progress. Kelly, of Fisk Design Group, crafted the ambiance to feel like “a welcome reprieve from the mundane.”

The bar operates Wednesday and Thursday from 3 to 9 p.m., Friday and Saturday from 3 to 10 p.m., and Sunday from 3 to 8 p.m., with Monday and Tuesday closed.
Exceptional staff drives success
With decades of hospitality experience, including Sam’s tenure as head brewer at Cherry Street Brewing Company, the Fisks are supported by their family and a small, proactive staff. Kelly praises the team, saying, “Our staff has been absolutely amazing at proactively solving problems before I even have to say a word.”
