Carole Love

Carole Love, 89, of Galesburg, passed away Friday, November 21, 2025, at home surrounded by family.

She was born August 5, 1936, in Williamsfield, the daughter of Paul and Francis (Eckstrom) Anderson. Carole graduated from Knoxville High School in 1954. On May 19, 1963, she married Kenneth “Kenny” Love in Galesburg. He died in 1998.

Carole owned and operated Mary’s Restaurant in Galesburg, famous for its hand-pounded and hand-breaded tenderloins, and later owned the Squirrel Cage bar in Williamsfield. She worked as kitchen supervisor at Henry Hill Correctional Center for 10 years and retired from Bergner’s in 2018.

She loved hosting family and friends, cooking homemade dishes, supper club, card clubs and bowling leagues with Kenny. Carole was a proud Chicago Cubs fan.

Surviving are her son, Michael Love of Galesburg; daughter, Jodi Love of Galesburg; grandchildren, Kenny (Nicole) Fox of Forsyth, Mason (Kylie) Love of McCordsville, Indiana, Amanda (Kim) Abel of Abingdon and Zander Sargent of Galesburg; great-grandchildren, Dylon Fox, Isabella Fraysure, Spencer Fox, Breanna McClain, Brittney McClain, Makayla Blackwell and Kashton Abel; great-great-grandchildren, Zayden and Novalynn Campbell and Braylen Zefo; brother- and sister-in-law, Bob (Vicki) Anderson; and her dog, Javy; along with many nieces, nephews and extended family.

She was preceded in death by her parents; husband; one daughter, Lori (Fox) Love; and one sister, Jan Anderson.

Cremation rites have been accorded. Private family graveside services will be held at Knoxville Cemetery. Hurd-Hendricks Funeral Homes and Crematory, Knoxville, is assisting the family. Memorials may be made to the family. Online condolences may be left at www.hurd-hendricksfuneralhome.com.
