
Dos Raíces, a new Mexican restaurant from the owners of Cielito’s Cafe, will open at the former Grandview Restaurant location on Grand Avenue by the end of February.
The name “Dos Raíces” — meaning “Two Roots” — reflects the blending of Mexican and American culinary traditions. “Dos Raíces essentially means where two cultures, one identity — Mexican + American, honoring where we come from,” Josefa “Monse” Chaidez said.
“Built on family, culture, and bold flavors, Dos Raíces aims to become a new community favorite.”
Chaidez and her sister Aurora Sanchez plan to serve Cielito’s popular breakfast menu until noon, then transition to an expanded Mexican lunch and dinner menu featuring more seafood items, ceviche, cocktails, and other dishes not widely available in Galesburg.
Dos Raíces will be open seven days a week, with exact hours to be announced closer to the opening.
Chaidez said the food will be authentic. “I think our Mexican food is authentic. I think we’ve put our love in everything we prepare. When you make something with love, that’s what sets you apart from other people.”
She said the southeast-side location will benefit from traffic coming in from Knoxville and surrounding areas.
The space was purchased by Benedict Holdings, owned by Rob Benedict and his sons Trent, Adam, and Blake, and is being leased to the new restaurant. Rob Benedict said the goal was to find a strong local operator for the long-term lease.
Grandview Restaurant, a southeast-side landmark that operated for 73 years, closed its doors in December 2025.
Cielito’s Cafe, which opened in September 2020 at 1488 N. Henderson St., will remain open.
