Western Smokehouse Partners, which includes Galesburg's Thrushwood Farms, is in a phase of expansion it hasn't experienced before. In addition to two expansion projects in Galesburg, plants in Burlington, Iowa, and in Missouri are either being built, just opened, or already expanded.
